At our farm, we take pride in growing fresh, organic herbs and veggies that are not only packed with flavor but also perfect for creating wholesome, delicious meals. Recently, I put our freshly harvested fennel to the test in a simple yet satisfying dish: White Fish with Sweet Potato and Fennel.
A Fresh Take on a Classic
This recipe combines the delicate, flaky texture of white fish with the natural sweetness of roasted sweet potatoes and the mild, aromatic licorice flavor of fennel. The fennel’s unique taste elevates the dish, adding a gourmet touch that makes it feel like a restaurant-quality meal, yet it’s simple enough to prepare at home.

INGREDIENTS: 2 servings
1 large bulb fennel, sliced
fennel stalk and leaves, chop into pices, and put aside to use later
1 Japanese sweet potatoes, boiled, and cubed
1 carrot, boiled, cubed
3 large cloves garlic, crushed
3 tbsp olive oil
1/4 cup freshly squeezed lemon juice
1 tsp salt
1 tsp pepper
1 tsp fresh or dried thyme or rosemary
300 white fish fillets (seabass or cod)
1 lemon sliced
some parsley leaves for decoration
INSTRUCTIONS:
Making sauce: mix garlic, olive oil, lemon juice, salt, pepper, rosemary,
Bowl 1 (cast iron pan): add sweet potato, carrot, fennel bulb, marinate it with 1/3 sauce in 10 mins
Bowl 2: add fish, shrimp, any seafood you want, with fennel stalk and leaves, marinate with rest of the sauce in 20 mins
Place cast iron of sweet potato in the oven, 450F (232C) for 20 mins
Add fish and the rest into the cast iron, continue baking for another 20 mins
