Tatsoi, a tender leafy green from the brassica family, is a fantastic ingredient for a quick and healthy stir-fry. With its mild, slightly mustardy flavor and silky texture, it pairs beautifully with the rich aroma of garlic. This simple stir-fried tatsoi with garlic recipe takes just a few minutes to prepare and makes for a perfect side dish or light meal.

Why Tatsoi?

Tatsoi is often called “spoon mustard” because of its unique spoon-shaped leaves. It is packed with vitamins A, C, and K, along with essential minerals like calcium and potassium. The delicate leaves and crisp stems cook quickly, making tatsoi a great choice for busy weeknights.
INGREDIENTS: 2 servings
500g of fresh tatsoi, rinsed and trimmed
3 cloves garlic, minced
1 tablespoon vegetable oil
1 teaspoon mushroom powder
1/2 teaspoon salt
1/4 teaspoon black pepper
INSTRUCTIONS:
Prepare the Tatsoi: Rinse the tatsoi well under running water to remove any dirt. Shake off excess water and trim the ends if needed.
Heat the Oil: In a large pan or wok, heat the vegetable oil over medium-high heat.
Sauté the Garlic: Add the minced garlic to the pan and stir-fry for about 30 seconds until fragrant but not browned.
Add the Tatsoi: Toss in the tatsoi and stir-fry for about 2-3 minutes, until the leaves wilt and the stems turn slightly tender but still crisp. Add 2 spoons of water.
Season: Drizzle with mushroom powder, salt, and black pepper. Stir well to coat evenly.
Finish and Serve: Serve immediately as a side dish with rice, or steak

Tips for the Best Stir-Fried Tatsoi:
- Don’t overcook! Tatsoi wilts quickly, so keep an eye on it to maintain its bright green color and crisp texture.
- Use high heat. Stir-frying over high heat helps retain flavor and texture.
- Add protein. For a more filling dish, toss in tofu, shrimp, or thinly sliced chicken.
