Out spill tiny pale pink pearls. Nature's own popping boba.This is finger lime. Chefs call it citrus caviar, or caviar lime.Citrus australasica comes from the rainforests of eastern Australia. Aboriginal Australians were eating it long before any chef found it.All citrus flesh is made of tiny juice sacs called vesicles. In a regular lime they're long, packed tight and stuck together. In finger lime they stay round and loose, so they tumble out like caviar. Skin can be green, black, purple or red. Pearls go from pale green to pink to deep red. Ours: dark skin, pale pink pearls.How to eat it? Cut it in half. Squeeze from the end like toothpaste. The pearls pop between your teeth. Sour, uniquely fragrant, fresh, clean. Try it on oysters, sashimi, grilled fish, yam, miang kham, a G&T or coconut ice cream. Don't juice it. Milky mushrooms. First flush after the big rain. 🍄Calocybe indica. Also called milky mushroom, or summer mushroom.We grow it on a compost bed under plastic. Straw, spawn, then a casing layer on top. Then you wait, and you keep it dark and damp, and you do not disturb it.Then one morning they are just there.Look at the base of the big one. Those little white pins are the next flush coming up behind it. That is what a healthy bed looks like.No spray. No fungicide. Nothing but compost, water, and patience.On the plate it holds up better than most. Thick stem, firm bite, mild and slightly sweet. It does not collapse into mush in a curry or a stir fry. Slice the stem thick, do not waste it, the stem is the best part.It also keeps longer than oyster or straw mushroom after picking, which for a farm selling direct means it actually arrives at your kitchen in good shape.Small batch this round. Beetroot. Out of the ground this morning. 🌱Our soil here is sandy clay. Alive, mineral rich, no chemical spray, nothing forced. Small farm, slow growing. The beets take their time and fill up with flavour instead of water.Now look at the tops.Supermarket beetroot shows up bald. The leaves get cut off at origin because they wilt in two or three days and never survive the long haul in a chiller. That means you lose the best part of the plant.Beet greens are fully edible and honestly better for you than the root. Vitamin K, vitamin A, folate, iron, magnesium, several times over. The glowing pink stalks are betalain, the same pigment that turns the root deep crimson.How we eat the whole thing: Leaves, fried hard with garlic. Like spinach, but with attitude. Stalks, sliced into batons and started a minute early. Root, roasted until sweet, or grated raw into salad.Leaves attached means it was in the soil this week. No leaves means nobody can tell you how long it sat in cold storage. 🥬Grown here. Grown slowly. 🥚 What does "free-range" actually mean?Short answer: it is a rule about a door. Not a promise about a life.Here is how three different places write that rule.🇪🇺 **Europe counts everything.** Hens must be able to go outside all day. The outside bit has to be mostly grass or plants, not bare dirt. One hen per 4 square metres out there. Inside, no more than 9 hens per square metre, 15 cm of perch each for sleeping, and loose litter over a third of the floor for dust bathing. The grass also has to be within 150 metres of the little chicken door. Yes, someone measured that.🇺🇸 **America counts almost nothing.** The hens need outdoor access during laying. The outdoor area can be fenced or covered with netting. There is no minimum space per hen. No rule about what the ground is made of. No rule about how the birds actually get out there.🇹🇭 **Thailand sits in between.** The standard says hens are let out for part of the day onto ground with grass or plants they can eat, so they can scratch, forage and preen. Extension guidance suggests around 5 square metres of range per bird. Guidance, though. Not a hard line.So the label regulates the door. It does not tell you whether the hens walk through it.What decides that is simpler than it sounds. How wide the doorway is. Whether there is shade and cover outside. How far a hen has to walk across open ground. How many birds are sharing it. Chickens are prey animals. A bare field with nothing to hide under looks like a bad idea to them, so most of the flock stays near the wall.🍳 One more myth while we are here. A deep orange yolk tells you about feed, not about freedom. Marigold, corn, greens. A caged hen fed the right thing makes a lovely orange yolk.🐣So skip the label. Four questions do more work.🐓How many hens. How big is the range. How many hours are they out. Two new figs of the week. Fully ripe despite the rain.The dark one is Black Madeira from Portugal. Collectors call it the King of Figs. Deep red jam inside, with enough acid to stop the sweetness getting smug.The green one is Inca Gold. Nothing to do with the Incas. A Southeast Asian favourite, barely known in Europe. Today we had to move one of our stingless bee nests into a new house box.Rainy season = humidity… and unfortunately, their old house got too damp and started growing mold. So we had to step in and give them a fresh, dry home.Hopefully they’ll rebuild their nest, recover, and survive this round.This happens every year during the rainy season. And when the bees are busy surviving instead of producing honey… well, there goes our honey supply.So next time you wonder why our honey is expensive… 🙂↔️ Now you know.
